How often should a wood fireplace be swept?

Once a year if you burn regularly, or after roughly one cord of wood. Creosote is what causes chimney fires, and it builds fastest in slow, smoky fires.

My gas fireplace works fine — why service it?

Gas fireplaces build dust on the burner and pilot, which is the usual cause of a unit that will not light on the first cold night. The carbon monoxide reading is the other reason: a blocked or degraded vent is not visible from the room.
